I think I want to make out with these apricots. Is that weird? I would probably get goat cheese all over my face though and break out even more than I already am, but it would be so worth it! Seriously, these are heavenly. I had no idea how much I liked apricots until I made these. They are sweet because of the apricots and honey, a bit tart from the goat cheese, and oh so buttery with the pistachios! So many layers ... so little time to devour them all in one-sitting ... well almost not enough time!

You don't bake these which makes them a great appetizer to bring to a party. Don't you hate when food that is supposed to be hot at a party gets cold and gross from sitting there? No worries about that with these. Plus, the apricots make this an absolutely perfect summer dish! I say go-for-it! These are definitely going to be my traveling app for the next party I go to. Although, that might not be for a while. I don't get out much ... except to the kitchen!

I piped the goat cheese on to the top of the apricot halves, but you certainly don't need to do that. Rolling the goat cheese into little sphere toppers works just as well! Here are some more pics to tickle your fancy!

Goat Cheese Topped Apricots Appetizer

makes 1010 mins 

These are no-bake, delicious, easy, and refreshing. They are a perfect appetizer for a summer party!

  • 10 apricot halves (pitted)
  • 5 oz goat cheese
  • 4 Tablespoons pistachios (chopped)
  • 4 Tablespoons honey

Line apricot halves onto your serving platter. Top each apricot half with about 2 teaspoons goat cheese rolled into a ball. Alternatively, pipe about 2 teaspoons of goat cheese onto each apricot half. If you are doing the latter, make sure the goat cheese is softened; otherwise, it will not pipe out. About 10 seconds in the microwave will do the trick!

Top goat cheese-filled apricots with pistachio pieces. Finally, drizzle honey onto each apricot and onto the platter for presentation.
