Homemade Thin Mints
Since it's Girl Scout Cookie season and Valentine's Day season, I thought I would celebrate the two together! Meet Homemade Thin Mints {Valentine's Day Style}. These are so simple, you have to be careful and not blink or you could miss the recipe! It's got two ingredients: Andes Mints + Ritz crackers. If you can't wait for your Girl Scout Cookies to come or if you can't wait long enough to drive to your local grocery store, this is just the thing to curb your craving. And if you have a sweetheart, consider making these for him/her for the big love day! If these don't tickle your fancy, how about a S'mores Milkshake for Two?
1. Melt the Andes on low ... careful as the mint chocolate can burn easily.
2. Drop a Ritz in and cover it with the melted mint chocolate using a spatula.
3. Let dry on some parchment paper.
4. Decorate if you would like!

Homemade Thin Mints
Makes: 30 Total Time: 20 minutes
Ingredients:
one large bag of Andes Mints
one box of Ritz crackers
Directions:
In a saucepan melt Andes Mints on low. Stir frequently and watch carefully as chocolate can burn easily. One at a time, dip and cover Ritz crackers with melted Andes mints using a spatula. Let dry on parchment paper. Cut off excess chocolate before serving.
