Date Caramel Latte
I've got a healthy latte of sorts for you today. It's a date caramel latte. Yep, that's right. It's a latte with caramel sauce that is sweetened with dates only, no refined sugar. It's freakin great. The date caramel recipe is vegan. I made my latte with whole milk, but you can definitely make this a vegan latte by swapping the whole milk for nut milk.
This recipe starts with the blender. I used this bad ass Pro Line® Series Blender with Thermal Control Jar from KitchenAid. I didn't use this feature, but it will actually heat the contents at the same time as it blends. Think tomato soup with one press of the button. Mind blown. I debated just blending and heating iced coffee, milk, and the caramel ingredients to make this recipe with one click of a button. I may go ahead and do that to experiment. Stay tuned.
I'm not sure if you remember, but I went sugar free for January, and I learned so much. First of all, I learned how much refined sugar I eat. Holy moly! I was shocked. The other thing I learned was that I have a raging sweet tooth. After a month without processed sugar, I thought I wouldn't still crave sweets ... but I did. Everyday. Ugh. So with that, I started trying to come up with recipes that would satisfy my sweet tooth but that weren't made with refined sugar. Hence, this date caramel latte recipe was born. I love my lattes, and my drink of choice lately has been a "two pump chump" as my husband and I call it. Haha! It's a decaf whole milk latte (I really only drink decaf because I can't handle caffeine) with two pumps of vanilla and two pumps of hazelnut. Terrible ... I mean wonderfully tasting, but definitely not healthy at all. Well, I have found a healthy latte alternative, and I hope you like it.
Are you a foam or no foam kind of latte person? I am definitely a foamy latte person ... spoon it on high ... the higher the better ... until it looks like a decadent dessert. Yum! My Flynn man loves to make steamed milk with me. He loves pressing the button on the frother and watching it spin around and foam.

I am telling you this date caramel is so good. I was shocked at how delicious and sweet it is. You are not missing out at all with this recipe. Spoon (or pour) it on some nice cream, and you don't have to feel guilty at all for fulfilling all of your sweet dreams.
This healthy latte is sweet but not too sweet. It's really perfect. It satisfies your craving but doesn't leave you feeling sick afterward. Although it's delicious, I often feel overloaded when I get my "two pump chump" at Starbucks. Do you guys like your lattes really sweet or just a lil sweet?
Can I just say how underrated dates are? They are so good you guys. They are sweet and sticky and delicious. Flynn man loves them too, and I don't feel bad letting him snack on them. That's another thing. They make a great snack for littles. They travel well, and they are naturally sweet. This date caramel recipe makes a ton of caramel, so I suggest pouring it into jars and storing it in the fridge to use it for whatever you like. In addition to a vegan latte, it would be so good with greek yogurt, ice cream, etc.

- 1 package (16 ounces) dates
- 1 can (16 ounces) full fat coconut milk
- 1 bottle (11 ounces) coconut nectar
- 2 tablespoons water
- 1 teaspoon salt
- 2 teaspoons vanilla extract
