Orange Yogurt Pancakes
This is the last day in January, so you know what that means ... our last recipe in our 12 Healthy Recipes series! I can't believe it's already over, but as Ferris says, "life moves pretty fast ... if you don't stop and look around once in a while, you could miss it" ... one of my favorite quotes from that movie!
Speaking of Ferris, I cannot wait for the Super Bowl commercial! If you know me, you probably know that Ferris Bueller's Day Off is our family's national anthem. Seriously. We would have Ferris Bueller's Day Off trivia on our family trips.
Ask me what kind of car Cameron's dad had ... 1961 Ferrari 250 GT California ... ask me what the student said to the teacher when asked where Ferris was - "my best friend's sister's boyfriend's brother's girlfriend heard from this guy who knows this kid who's going with a girl who saw Ferris pass out on 31 flavors last night ... I guess it's pretty serious." Yep, pretty sad that I know that. Let's just say my family had a lot free time on our hands!
Although one person in my family didn't have a lot of time on her hands ... my mom. She was taking care of us five kids, cleaning, and cooking ... and cooking! She is one of the most amazing cooks EVER!
And she is the one who gave me this Orange Yogurt Pancakes recipe. It is so divine! I usually don't like orange things ... like orange chicken ... the orange fortune cookies you sometimes get which really end up being unfortuante ... but these orange pancakes work!
I'm not sure what it is, but the pancake batter and orange flavor are a match made in heaven. And these are healthier than the normal pancake. They are made with whole wheat flour, yogurt, and egg whites instead of white flour, butter or oil, and eggs.
You can serve these plain to stick with the healthy theme, or if you want to splurge a little, drizzle these with some pure maple syrup.
Maybe make these for a Super Bowl survival's breakfast (like Prince Harry's survival breakfast after his brother's wedding ... I just loved that idea) or on just a lazy weekend!
Orange Yogurt Pancakes with Strawberries
Makes: 4 Total Time: 10 minutes
Ingredients:
1 naval orange
3 Tablespoons coconut sugar
1/3 cup fresh orange juice
3/4 cup Greek yogurt, plus additional for garnish
2 egg whites
2 Tablespoons unsalted butter, plus additional melted butter for brushing the griddle
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon double-acting baking powder
1/2 teaspoon salt
1/4 tsp salt strawberries for garnish
Directions:
Melt butter. In a bowl, combine sugar, yogurt, egg whites, orange juice and melted butter. In another bowl sift together flour, baking soda, baking powder, and salt. Add the yogurt mixture and stir the batter until combined well. Spoon out batter to your size preference on heated and greased griddle. Cook until bubbles form, and flip. Cook other side until golden. Divide the pancakes among plates and garnish each stack with yogurt, berries, and orange zest. Serve plain, with honey, or with pure maple syrup.
