St. Patrick's Day Pesto Hummus with Shamrock Pitas
This pesto hummus is a fun last minute St. Patrick's idea you can do with the kids. They will get a kick out of making the shamrock pitas. Plus it's healthy and green ... mom and St. Patrick's Day approved! I got the idea for this pesto hummus from Zoe's Kitchen. Have you guys been there? It's so good! They have this amazing pesto hummus that I crave almost everyday. Not only is this recipe great to make with the kiddos, it would be perfect to serve at a St. Patrick's Day Beer Tasting. Here is how to do it.
INGREDIENTS
1 15 ounce can of garbanzo beans
1 1/2 tablespoons tahini
2 cloves of garlic
Juice of a lemon
1/4 teaspoon salt
2 tablespoons water
1 large package fresh basil leaves
1/4 cup toasted pistachios
1 package of pitas
Shamrock cookie cutter (a sharp metal one like this one)
DIRECTIONS
Add all ingredients to a food processor and pulse until the mixture is creamy. Taste and add whatever is needed. If you want more pesto flavor, add some basil. If you need a bit more zip, add some salt. If it needs to be a bit creamier, add some tahini.
Using the shamrock cookie cutter and pitas, cut shamrock shapes. Easy peasy!
Here is an extra bit of fun for you today. Since we are talking St. Patrick's Day, here is a picture of my dad at college graduation. Can you tell he is 100% Irish or what? Although my hair has a lot of red undertones, I didn't inherit those awesome red locks. I was hoping Flynn man would get the red hair, but he didn't either. He does have A LOT of red undertones though. In some lights he looks like a ginger through and through ... yay!
So back to this basil pesto hummus. Pesto is a staple in our house. I make it at the beginning of each week so we have it for caprese sandwiches, pasta, and whatever else needs a lil kick. I love it so much I could eat it by the spoonful. The secret ingredient for this pesto hummus is roasted pistachios. It gives it an extra nutty flavor.
This hummus pesto style is so quick to make. That's important because you will have more time to down more pints of Guinness come St. Patrick's Day ... priorities people!
I think it's pretty to serve this hummus with pesto with a drizzle of olive oil and some basil leaves.
