Instead of serving sweet potatoes the traditonal way in a big pot, I think it would be fun to serve sweet potatoes in individual mini pumpkins on Thanksgiving! 1 20 oz. can cut sweet potatoes/yams drained and mashed
1/4 cup coconut sugar
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tbsp. melted butter
1/4 cup cream
1 bag mini marshmallows
6 white mini pumpkins
Preheat oven to 350 degrees F. Blend sweet potatoes with sugar, salt, spices, butter, and cream. Mix sweet potatoes with about 12 mini marshmallows. Dole out into a greased baking dish. Bake at 350 degrees F for 20 minutes or until mixture is puffy. Cut off the tops of white mini pumpkins and spoon out seeds. Portion sweet potatoes into pumpkins. Top with marshmallows. Put pumpkins on baking sheet and broil for 1 minute or until marshmallows are brown. Be careful … it will be quick! Serves 6.
