Clean Out Your Fridge Smoky Chili with Cheesy Jalapeño Cornbread
Today I'm sharing an easy slow cooker chili recipe. I'm calling it Clean Out Your Fridge Smoky Chili with Cheesy Jalapeño Cornbread. Did you guys know it's National Clean Out Your Refrigerator Day? Frankly, there is a national holiday for everything now, so most days have lost their luster. But National Clean Out Your Refrigerator Day is one I can get behind. Not sure about you, but I definitely need a holiday to remind me to clean out and organize my fridge. Things get lost in there behind the sea of condiments unless I tidy it up every so often. And you know I love containers. I get a kick out of finding the perfect container for everything, so it's another excuse for me to buy some glass milk bottles, separators, you name it! This easy slow cooker chili is just the thing for National Clean Out Your Refrigerator Day. You can use whatever you have in your fridge. I did slow cooker beef chili here, but you can use whatever meat is laying around in your refrigerator. Ground turkey, pork, or short ribs are great alternatives. You can even go veggie. I'm not a big meat eater, so veggie chili is right up my alley. Maybe add a little quinoa ... yum. For this recipe or any chili recipe for that matter, onions and garlic are always a great place to start. But from there you can use whatever veggies you have in your fridge: kale, carrots, celery, bell peppers, mushrooms, etc. And as far as beans go, whatever is in your pantry will do: white beans, kidney beans, black beans, etc. To get the smoky flavor, I recommend some chipotle peppers in adobo sauce. They are pretty spicy so make sure to use them sparingly. Definitely get that sauce in there too. This easy slow cooker chili is a winner in my book.
You know what sends this over the top ... serving it with some Cheesy Jalapeño Cornbread. I repeat ... Cheesy Jalapeño Cornbread. I mean how can you eat chili without some cornbread. And doesn't Cheesy Jalapeño Cornbread just sound next level? It's really good folks. And to make it easy on you my recipe calls for using cornbread mix. Not all mixes are created equal. If it turns out the mix you get doesn't make your cornbread as sweet as you would like, add some honey to the baked bread. It should do the trick. Really is there anything a lil honey doesn't fix?
For the rest of America it is starting to get cold outside. It's still almost 90 degrees here. So for the love of God please make this easy slow cooker chili for me and enjoy it. I enjoyed it, but I would have devoured it if I was curled up next to a fire in the chilly air. And do me another favor ... make a big batch. Chili is one of those dishes that is great for leftovers. It's even better the second day after all the ingredients have had a chance to love one another. Now what are you waiting for?
