Slow Cooker Chipotle Short Rib Tacos with KitchenAid
These slow cooker tacos, Slow Cooker Chipotle Short Rib Tacos to be exact, are just the thing for today. Do you know why? Not only is it Taco Tuesday, it's National Taco Day friends. Holla! I'm not gonna lie, I love a good taco. And meat that falls apart inside is just where it's at. These slow cooker tacos have short rib meat that melts in your mouth plus smokey chipotle peppers in adobo sauce + a drizzle of creamy cilantro lime crema ... does anything sound better right now? Help me celebrate National Taco Day by hopping on over to the Kitchenthusiast and making these delicious slow cooker tacos.
To make these slow cooker tacos, you start by browning short ribs. You don't have to do this step, but I find that getting a good sear on the meat lends rich flavor to the final dish. You don't cook these for long on the cooktop. Sear each side until just browned on medium heat. It will only take you a couple minutes on each side.
Then you throw everything in the slow cooker ... because of course we are making slow cooker tacos. For full disclosure, I actually used my multi-cooker on the slow cooker setting. Man I love that thing. Speaking of love ... my love for slow cooker short ribs is so great. I would prefer to eat them once a week ... on a taco, by itself, in pasta ragu. Can you tell I have been reading too many Dr. Seuss books lately?
Just before the meat is done, you will want to whip up the Cilantro Lime Crema. Oh yes I did. This creamy drizzle is the perfect thing to balance out the heat of the chipotle peppers. It adds a zing to the full body meat that is so refreshing.
You can serve these slow cooker tacos flat or rolled up normal taco style. I'm a soft shell flour tortilla lady, and wheat is A-okay.
